About this Class

In this class we’ll look behind the curtain, demystifying classic custard desserts like crème brûlée so you can confidently make them at home. You’ll learn our technique for making creme anglaise, and follow along as we build a water bath to gently cook your custards. We’ll talk about the science of thickening custards with eggs, and discuss how slightly different ingredients and methods create distinct textures and flavors. Finally we’ll cook through three of our favorite custard desserts: classic crème brûlée, a glistening, caramel-topped flan, and rich chocolate pots de crème.
