About this Class

In this class, we will focus on winter squash like butternut, acorn, and spaghetti squash. With their large size and thick skin, these squash can be intimidating at first glance, but with some simple techniques and safety tips, you can get to the sweet flesh inside of them with minimal fuss. In this vegetarian-friendly class, you’ll learn how to master a dressed-up version of roasted squash and a new look at comforting, creamy butternut squash soup. But we’ll also introduce you to acorn squash stuffed with a hearty vegetarian filling and a unique salad with spaghetti squash as the star.

Ashley is an on-screen test cook for Cook’s Country, a food stylist for America’s Test Kitchen, and an instructor for ATK Classes. Prior to food styling, she developed recipes as a senior editor for Cook’s Country magazine as well as for the books division of America’s Test Kitchen. She holds an AOS degree from Johnson & Wales University and a BFA in acting from the California Institute of the Arts. Before coming to America’s Test Kitchen, Ashley lived in New York for several years—she spent some of that time working at the Food Network with Emeril Lagasse and Bobby Flay and also worked in specialty food sales and catering.

Eric Haessler is an associate editor on Cook's Illustrated, where he develops recipes, produces food for photo shoots, and shoots content for social media. A graduate of the Cambridge School of Culinary Arts and an instructor in the school's recreational cooking program, Eric has been teaching classes at ATK since 2021. Before entering the cooking field, he taught performing arts to children for 15 years. On weekends, you can find him strumming his guitar, tending to his extensive flower garden, and keeping bees.

Bridget Lancaster

Bridget Lancaster is the co-host of the America's Test Kitchen and Cook's Country cooking shows and has been an original cast member since the inception of the shows. She began her career at ATK as a test cook for Cook's Illustrated and was part of the founding team for Cook's Country magazine. She helped to launch the America's Test Kitchen Online Cooking School (now ATK Classes) as the lead instructor, and was a regular contributor to America's Test Kitchen Radio. Bridget also co-created, produced, and hosted the award-winning Proof podcast.
