In this class, you will learn the essential rules of cookie baking and the basic techniques every cookie has in common (as well as frequent pitfalls and how to avoid them). We’ll show you what equipment works best in any oven and how to build your cookie pantry. We’ll deep dive into specific ingredients like butter and leaveners, and you’ll see how some simple changes to those ingredients can alter the texture of a cookie. Finally, you’ll learn best practices for storing and shipping your cookies so you can share your baked goods with family and friends.

Ben is a venerated food writer, award-winning cookbook author, and editor. Ben studied at the French Culinary Institute and then worked meaty jobs at the industry’s best publications, including Saveur, Food & Wine, Lucky Peach, and the LA Times. His cookbooks include Coconut (2017), Sweet & Southern: Classic Desserts with a Twist (2018), Air Fry Every Day (2018), and his recently released Crumbs: Cookies and Sweets from Around the World (2024). Ben is a member of ATK's first-ever group of editors in residence, a two-year program during which he develops exclusive recipes and collaborates on video, podcast, and TV episodes with the test kitchen team.
