About this Class

Spices are the backbone of many recipes, but do you know how to identify common spices? Or how old the jars in your spice rack are? In this class you’ll learn about the most common spices, their flavor profiles, and how to use them. You’ll discover the best way to enhance the flavors of the spices in a recipe by toasting and blooming, and finally how to treat the most coming spices in your arsenal, from grinding whole chiles to make chile powder and cracking peppercorns for steak au poivre to extracting every bit of flavor from vanilla beans.

Bridget Lancaster is the co-host of the America's Test Kitchen and Cook's Country cooking shows and has been an original cast member since the inception of the shows. She began her career at ATK as a test cook for Cook's Illustrated and was part of the founding team for Cook's Country magazine. She helped to launch the America's Test Kitchen Online Cooking School (now ATK Classes) as the lead instructor, and was a regular contributor to America's Test Kitchen Radio. Bridget also co-created, produced, and hosted the award-winning Proof podcast.

Elle Simone was an Executive Editor at America’s Test Kitchen. She was also a food stylist for Cook’s Country, an on-screen test cook for America’s Test Kitchen, and host of The Walk-In podcast. Elle created media content for both ATK television segments and ATK Social Media. Elle appeared on Food Network, Food Network Magazine, The Cooking Channel, The Katie Couric Show, CBS Corporation, ABC’s The Chew, and Bravo’s Chef Roble and Co. Elle has been featured in stories in the Boston Globe, Forbes, Eater and on the Tom Joyner Morning Show and National Public Radio.

Sarah Wilson

Instructor, ATK Classes

Sarah Wilson has been an Instructor for ATK Classes since the original cooking school began in 2011. She develops content and works directly with students to teach and guide them through our comprehensive curriculum. She began her career at ATK as a test cook for Cook's Illustrated in 2005. She has also developed recipes for Cook's Country, various cookbooks and special issue publications, and ATK Kids. A graduate of the College of William and Mary, she has a BA in Finance with a concentration in English.
