About this Class

In this class we’ll bust the myths about veganism and explore just how exciting a plant-based diet can be. We’ll talk about the principles of the vegan kitchen, walk through our favorite flavor boosters and pantry ingredients—plus some sneaky non-vegan foods to look out for—and do a deep dive into vegan proteins. You’ll learn how to avoid processed foods by making your own vegan staples, like a flavorful broth base and a salty, nutty Parmesan substitute. Finally, we’ll cook through three stellar recipes: rich, hearty pasta sauce; Baja-inspired tacos; and a satisfying meatless burger.

Senior Editor, Cook's Country

Lawman Johnson is a senior editor of Cook’s Country magazine and has been an on-screen test cook for Cook’s Country since 2018. A Boston native, Lawman earned his BS in economics from Northeastern University. After a successful career serving as back office support at several area financial management companies, Lawman decided to switch careers to pursue his love of cooking. He graduated from the Cambridge School of Culinary Arts in 2010 and went on to work in some of the most well-respected restaurants in greater Boston, from Chiara in Westwood to 51 Lincoln in Newton. Lawman joined America’s Test Kitchen in 2014 as a test cook for the Books team. Over the course of his time at ATK, he’s contributed to nearly 20 cookbooks—his favorites being Cook It in Cast Iron (2016); Tasting Italy (2018); and Vegetables Illustrated (2019)—and has developed countless recipes. When he’s not cooking, Lawman enjoys snowboarding, reading fiction, answering ’80s trivia, playing video games, and discussing all things Marvel Comics with his son.

Editorial Director, Classes

Christie Morrison is Editorial Director, Classes and an on-screen test cook for Cook’s Country. As editorial director, she creates the curriculum for ATK Classes and is executive producer for Classes video content. She has been a cooking class instructor since 2016. As a senior editor for Cook’s Country magazine from 2013 to 2016 and an associate editor on the Books team prior to that, she developed, tested, and edited recipes. Christie was also a culinary producer for Cook’s Country for the 2015 and 2016 seasons. Christie has a BA in English from Dickinson College and an MA in English from Bucknell University. A midcareer change brought her to Boston, where she received her culinary diploma from the Cambridge School of Culinary Arts (CSCA). In addition to teaching professional and recreational cooking classes at CSCA, Christie has worked in restaurants and catering kitchens in Boston.
