Why This Recipe Works

For a bright accompaniment to any roast lamb dish, we turned to fresh chopped mint as the base. Some fresh chopped parsley tempered the bite of the mint, a generous dose of lemon juice provided brightness, and plenty of extra-virgin olive oil added richness.
