Broiled Rib-Eye Steaks with Fresh Herb Butter

Because the strength of broilers can vary significantly, don't wander from the kitchen while the steaks are cooking. This recipe calls for large steaks (each 12 to 16 ounces), so it can easily feed six people.
Instructions
- Adjust oven rack to upper position (rack should be 5 inches from broiler element) and heat oven to broil. Combine butter, parsley, thyme, and garlic in bowl.
- Marinate steaks in Worcestershire sauce for 10 minutes. Pat steaks dry with paper towels and season with salt and pepper.
- Line bottom of broiler pan with foil and fit with slotted broiler-pan top. Arrange steaks on pan and broil until beginning to brown, about 2 minutes. Flip steaks, sprinkle with sugar, and continue to broil until well browned and cooked to desired doneness, about 5 minutes for rare, up to 12 minutes for well done. Transfer to platter. Top steaks with herb butter, tent with foil, and rest 10 minutes. Serve.
