Temperature Matters

Once you’ve set the parameters of the party, it’s time to think about the best part: the food. The most successful parties happen when the host can transition from the kitchen to the party as guests are arriving. Let’s explore three types of appetizers and how they work toward achieving this goal: Room-temperature appetizers can be completed from 3 to 5 days in advance and just need to be placed on serving platters and set out before the party. Cold appetizers can be made up to four days in advance and go from the refrigerator to the party with a quick assembly or garnish just before guests arrive. Hot appetizers can be prepared in advance and then heated through as guests arrive and throughout the party.

Room-Temperature Appetizers

Room-temperature appetizers can be made in advance and stored on the counter in air-tight containers until you are ready to set up your table or trays. Think crispy chickpeas, spiced nuts, and cheddar cheese coins. These can be set out before guests arrive, and other than refreshing the platters during the party, all but forgotten. Cold Appetizers

You can really get some mileage from cold appetizers. Just about any dip can be made in advance and stored in the refrigerator until you’re ready to transfer it to a serving bowl. A simple garnish of fresh herbs or a drizzle of extra-virgin olive oil makes any dish look freshly prepared, then out of the kitchen it goes to serve with crudite and crackers. Hot Appetizers
