Tofu is highly perishable and is best when it is fresh. Once opened, tofu has a shelf life of just a few days if not handled properly. Check out the best way to prolong the shelf life of your leftover tofu.
Store unopened tofu in the refrigerator and use it by the date on the package. If you don’t use the whole package after opening, store leftover pieces in water in a container and refrigerate; change the water every day for up to five days.
Slice extra-firm tofu into 1/2- to 3/4-inch-thick slabs, spread them in a single layer on a baking sheet or plate, and place them in the freezer overnight. (Once the slabs are frozen, the tofu can be placed in zipper-lock bags and stored in the freezer for up to a month.)
