Seasoning Fixes

It happens to us all. We add too much salt, sugar, or spice to a dish. Can it be saved?

Sometimes, for more mild cases, the overpowering ingredient can be masked by the addition of another from the opposite end of the flavor spectrum.

  • Too Spicy or Acidic? Add a fat such as butter, cream, sour cream, cheese, or olive oil; the fat can mask flavor. Sweeteners like sugar, honey, or maple syrup can balance contrasting flavors.

  • Too Sweet? Try adding any of the following seasonings: an acid such as vinegar or citrus juice; chopped fresh herb; dash of cayenne; or, for sweet dishes, a bit of liqueur or espresso powder.

  • Too salty? Add an acid such as vinegar, lemon or lime juice, or canned, unsalted tomatoes. Another option is to add a sweetener like sugar, honey, or maple syrup.

With any fix, start with a very small amount. You can always add more, but you don't want to compound the problem.
