Pastries are at their best on the day they're made, but you can extend their shelf life with these storage tips.

Before Filling

Once your pâte à choux are baked and cooled, you can wrap them tightly with plastic wrap and store them at room temperature for up to 24 hours. You can also transfer them to a zipper-lock bag and freeze them for up to 1 month.

Note: Whether they're frozen or stored at room temperature, the pastries will soften over time. So before filling your pastries, recrisp them in a 300-degree oven for 5 to 10 minutes.

After Filling

Filled pastries are best served the day they're made, but they can be refrigerated in an airtight container for up to 2 days. Just know that the pastries will soften and become soggy from the filling over time. They'll still taste good, but the texture won't be the same.
