Master Dumpling System

Making Chinese dumplings is as easy as following four simple steps.

As we’ve learned in this class, the Chinese seem to have created an entire system around dumplings that include many different fillings with just as many folds, and three distinct ways of cooking them. That makes for scores of variation. But no need to be intimidated, we’ve developed a system that allows you to create your own­ dumpling adventure. The idea is to choose from each section and have fun with it because no matter what direction you choose, your dumplings will be delicious!

Pick Your Wrapper

Homemade dumpling dough is soft and slightly stretchy, easy to roll and pleat, and chewier than store-bought wrappers. And with just two ingredients - flour and boiling water - it couldn’t be easier. Boiling water hydrates the flour quickly, yielding a moist but not sticky dough that's less prone to snapping back. Rolling wrappers with tapered edges and a slightly thicker center prevents dough from getting too thick at the seams. The more dumplings you make, the better you’ll get at this. Using a smaller-diameter rolling pin is very helpful here, but a conventional pin will also work.

Pick Your Filling

Dumpling wrappers (homemade or store-bought) can hold an array of juicy filling. The most popular fillings include pork, shrimp, and/or vegetables. Generally, a filling keeps for three days (and must sit for 30 minutes) so we suggest making the filling first so it's ready to use while you’re rolling your wrappers.

Choose Your Fold

There are many different dumpling shapes and folds, and some serve as the base for other, more elaborate shapes. Some basic folds we’ll work on in this class are Two-Pleat Fold method for our Pork Dumplings, Shanghai Soup Dumplings, Shu Mai, and the simplest of all folds, the Half-Moon Fold for our Cabbage and Mushroom Potstickers. Homemade Dumpling Wrappers will make for easier shaping and sealing, but store-bought dumpling wrappers will work as well.

Choose Your Cooking Method

How you cook your dumplings depends on your mood. Want something crispy and crowd-pleasing? Pot stickers all the way. Want to show off your ornate folds and keep the dumplings delicate? Steam them. For an easy, filling weeknight meal, boil your dumplings.
