Cucumber-Ginger Relish

Ingredients
½ cup rice vinegar 6 tablespoons extra-virgin olive oil ¼ cup lime juice (2 limes)2 tablespoons whole-grain mustard 1 tablespoon grated fresh ginger ½ teaspoon kosher salt 1 English cucumber, seeded and cut into ¼-inch dice1 cup minced fresh mint 1 cup minced fresh cilantro 1 serrano chile, stemmed, seeded, and minced
Before You Begin
For a spicier relish, reserve, mince, and add the ribs and seeds from the chile. To keep the cucumbers crisp, serve this relish within 30 minutes of assembling it.
Instructions
- Whisk vinegar, oil, lime juice, mustard, ginger, and salt in bowl until smooth. Add cucumber, mint, cilantro, and serrano and stir to combine.

Our take on a cucumber relish started with a punchy base of rice vinegar, lime juice, mustard, and a generous portion of grated fresh ginger. To that, we added finely diced cucumber, as well as loads of mint and cilantro, and a minced serrano chile for fresh heat.
