Quick Salsa

Quick Salsa

Ingredients

¼ small red onion 2 tablespoons minced fresh cilantro ½ small jalapeño chile, seeded and minced1 (14.5-ounce) can diced tomatoes, drained2 teaspoons lime juice, plus extra for seasoning1 small garlic clove, minced¼ teaspoon table salt Pinch pepper

Before You Begin

For a spicier salsa, reserve and add the jalapeño seeds.

Instructions

  1. Pulse onion, cilantro, and jalapeño in food processor until finely chopped, 5 pulses, scraping down sides of bowl as needed. Add tomatoes, lime juice, garlic, salt, and pepper and process until smooth, 20 to 30 seconds. Season with salt and extra lime juice to taste.

Why This Recipe Works

To ensure that the small amounts of onion, cilantro, and jalapeno broke down into even pieces and were well distributed throughout the salsa, we pulsed them in the food processor before adding the other ingredients. Removing and reserving the jalapeno seeds allowed us to adjust the spiciness.
