Air-Fryer Roasted Bone-In Chicken Breasts

Ingredients

2 (12-ounce) bone-in split chicken breasts, trimmed1 teaspoon extra-virgin olive oil Salt and pepper

Before You Begin

For an elegant presentation, cut the chicken breasts off the bone before serving.

Instructions

  1. Pat chicken dry with paper towels, rub with oil, and season with salt and pepper. Arrange breasts skin side down in air-fryer basket, spaced evenly apart, alternating ends. Place basket in air fryer and set temperature to 350 degrees. Cook until chicken registers 160 degrees, 20 to 25 minutes, flipping and rotating breasts halfway through cooking. Transfer chicken to serving platter, tent loosely with aluminum foil, and let rest for 5 minutes. Serve.

Why This Recipe Works

Bone-in chicken cooks beautifully in the air fryer, and the circulated hot air does nearly all the work. We rubbed the breasts with just a teaspoon of oil to ensure crispy skin and flipped and rotated them halfway through cooking, starting them skin side down to help the fat in the skin to render, then flipping them so the skin could brown. A moderate 350 degrees minimized moisture loss and resulted in perfectly juicy meat. For a sauce to drizzle over our roasted breasts, we created two bright, fresh options, either of which can be prepared while the chicken cooks (one enlists the micro wave but neither requires a pan or even a blender, keeping the prep minimal and cutting down on dishes to wash). With our chicken roasted, all that remained was to toss a simple salad, perhaps open a bottle of wine, and voilà—a fancy dinner for two ready in 30 minutes!
