Air-Fryer Ginger-Soy Beef and Vegetable Kebabs

Before You Begin
Sirloin steak tips, also called flap meat, are sold as whole steaks, cubes, and strips. To ensure uniform pieces, we prefer to purchase whole steak tips and cut them ourselves.
Instructions
- Microwave 4 teaspoons vegetable oil, ginger, garlic, and pepper flakes in large bowl until fragrant, about 30 seconds, stirring once halfway through. Whisk in sesame oil, soy sauce, honey, and orange zest and juice until combined. Measure out and reserve 3 tablespoons oil mixture. Add beef to remaining oil mixture and toss to coat; set aside.
- Meanwhile, toss red onion, mushrooms, and zucchini with remaining 2 teaspoons vegetable oil, salt, and pepper in bowl. Thread 1 piece of onion onto wooden skewer. Thread one-third of zucchini and mushrooms onto skewer, followed by second piece of onion. Repeat skewering remaining vegetables with 2 more skewers. Arrange skewers in air-fryer basket, parallel to each other and spaced evenly apart. Place basket in air fryer and set temperature to 400 degrees. Cook until vegetables are beginning to brown, about 8 minutes.
- While vegetable skewers cook, thread beef evenly onto remaining 2 skewers. Flip and rotate vegetable skewers, then arrange beef skewers on top, perpendicular to vegetable skewers. Return basket to air fryer and cook until beef registers 130 to 135 degrees (for medium) and vegetables are crisp-tender, 10 to 14 minutes, flipping and rotating beef skewers halfway through cooking.
- Transfer skewers to serving platter, tent with aluminum foil, and let rest for 5 minutes. Whisk reserved oil mixture to recombine. Using fork, push beef and vegetables off skewers onto platter and drizzle with oil mixture. Serve.

Why This Recipe Works
Whether you cook beef and vegetable kebabs on the grill or in the air fryer, the advice is the same: Resist the urge to thread both meat and veggies onto a single skewer! This arrangement may look pretty, but the meat will likely dry out long before the vegetables are done. For juicy chunks of beef and browned, tender-firm vegetables, we first chose well-marbled steak tips, cutting them into generous 1½-inch cubes. A quick ginger-soy marinade added deep flavor in 10 minutes, and we reserved some for a sauce. Meanwhile, we cooked our vegetable skewers—a mix of red onion, shiitake mushrooms, and zucchini. Partway through cooking, we stacked our beef kebabs on top, placed crosswise for maximum air circulation; this also brought the meat closer to the heat source for better browning. Soon our kebabs all emerged perfectly cooked.
