Chai–Spiced Pound Cake (Reduced Sugar)

Before You Begin

You can learn more about Sucanat in this article. The test kitchen's preferred loaf pan measures 8½ by 4½ inches; if you use a 9 by 5-inch loaf pan, start checking for doneness 5 minutes earlier than advised in the recipe. You can skip grinding the Sucanat in step 1; however, the cake will have a speckled appearance.

Instructions

  1. Adjust oven rack to middle position and heat oven to 325 degrees. Grease 8½ by 4½-inch loaf pan. Working in 3 batches, grind Sucanat in spice grinder until fine and powdery, about 1 minute. Whisk milk, eggs, and vanilla together in bowl.
  2. Using stand mixer fitted with paddle, mix ground Sucanat, flour, baking powder, salt, cinnamon, cardamom, cloves, and ginger on low speed until combined. Add butter, 1 piece at a time, and mix until only pea-size pieces remain, about 2 minutes. Add half of milk mixture, increase speed to medium-high, and beat until light and fluffy, 30 to 45 seconds.
  3. Scrape mixer bowl thoroughly with rubber spatula. Turn speed to medium-low, add remaining milk mixture, and beat until incorporated, about 30 seconds (batter will resemble soft-serve ice cream). Scrape down bowl again, transfer batter to prepared pan, and smooth top.
  4. Bake until toothpick inserted in center comes out clean, 1 hour 5 minutes to 1 hour 10 minutes, rotating pan halfway through baking.
  5. Let cake cool in pan for 10 minutes. Remove cake from pan and let cool completely on wire rack, about 2 hours, before serving.

Why This Recipe Works

Traditionally made with a pound of each of four basic ingredients (sugar, flour, butter, and eggs), a perfect pound cake should have a fine, even crumb and a velvety texture. But significantly reducing the sugar meant that we needed to rethink the classic formula to maintain the integrity of this iconic dessert. First, we needed to work on the flavor. We chose Sucanat as our sweetener, since tasters enjoyed its nuanced molasses notes. But the cake still tasted a bit bland, so we turned to our spice cabinet. The right combination of warm spices gave our cake a bold, chai-inspired flavor profile that jazzed up the cake considerably. To fix the dense and dry texture, we first tested mixing methods: a bowl method using melted butter, a standard creaming method in which we combined softened butter with the Sucanat, and a reverse-creaming method, in which we combined the Sucanat with the dry ingredients and then added softened butter in small chunks. Tasters preferred the even texture and good rise produced by reverse creaming. To avoid a greasy cake, we reduced the amount of butter and added milk to make up for any lost richness. Traditional pound cake recipes contain no chemical leavener, but we found that adding just a small amount of baking powder provided much better and more reliable rise. But the leavener had a negative effect as well: The texture was now too light and delicate for a proper pound cake. Our original recipe called for cake flour, which had prevented the cake from becoming tough. But switching to all-purpose flour for our low-sugar pound cake worked like a charm, giving us just the plush, fine crumb we wanted.
