Ultimate Cookies and Irish Cream Milkshakes

Ingredients

4 cups vanilla ice cream 10 chocolate wafer cookies, broken into 1-inch pieces4-6 tablespoons Irish whiskey Pinch table salt

Before You Begin

Tasters’ preferences varied as to the amount of liquor they preferred; start with the lesser amount of whiskey and add more to your liking. We prefer to use Irish whiskey here, but American whiskey will work as well. For a nonalcoholic version of this recipe, substitute ½ cup whole milk for the whiskey. This recipe can be easily doubled; simply process the milkshakes in two batches. Garnish with whipped cream, chocolate sauce, and extra wafer cookies, if desired.

Instructions

  1. Place two pint glasses in freezer and chill until ready to serve. Let ice cream sit at room temperature to soften slightly, about 15 minutes. Process cookies in food processor until finely ground, 30 to 60 seconds. Add ice cream, whiskey, and salt and process until smooth, about 1 minute, scraping down sides of bowl as needed. Pour milkshakes into chilled glasses and serve.

Why This Recipe Works

Instead of starting with cookies-­and-cream ice cream, which can have unevenly sized cookie pieces, we made our own cookie crumbs by grinding chocolate wafers in a food processor before adding vanilla ice cream and processing to dreamy, creamy perfection. A pinch of salt intensified the flavor of the vanilla to create a deeply sweet treat. For our adults-only take on this decadent milkshake, we found that Irish whiskey provided the best flavor with its subtle toasted honey notes.
