Why This Recipe Works
A flour tortilla turns into a cross between a crepe and a pancake in this warm, satisfying dessert that comes together in just a few minutes and is hardly more work than making a PB&J. No “queso” in this quesadilla; instead, we spread peanut butter (dealer’s choice—creamy or crunchy) over half of a tortilla, then top the nut butter with a handful of chocolate chips and fold the tortilla in half. We toast the quesadilla in a little butter until it is crispy and well browned, the peanut butter is warmed through, and the chocolate chips are melted to creamy perfection. This basic formula lends itself beautifully to improvisation with other fillings and toppings.
