Citrus Syrup

Ingredients

¾ cup sugar 5 ounces water 2 teaspoons grated grapefruit, lemon, lime, or orange zest

Before You Begin

These syrups can be refrigerated for up to 1 month. Shake well before using.

Instructions

  1. Heat sugar, water, and zest in small saucepan over medium heat, whisking often, until sugar has dissolved, about 5 minutes; do not boil. Let cool completely, about 30 minutes. Strain syrup through fine-mesh strainer into airtight container; discard solids.

Why This Recipe Works

We developed this flavored syrup by adding citrus zest to hot syrup to impart their flavors during the time it took for the syrup to cool. When using this syrup in our recipes, we were careful to account for their specific level of sweetness, as well as their water amount (which affects a cocktail's dilution), in order to achieve perfectly balanced cocktails.
