Ingredients

2 ounces blanco or reposado tequila 1½ ounces Mixed Berry Shrub Syrup ½ ounce lime juice, plus lime slice for garnishing4 ounces seltzer, chilled

Before You Begin

You can use blanco or reposado tequila in this recipe; reposado will provide more nuanced aged and oaky notes to the drink, while blanco will create a brighter and more tequila-forward cocktail.

Instructions

  1. Add tequila, shrub syrup, and lime juice to cocktail shaker, then fill with ice. Shake mixture until just combined and chilled, about 5 seconds. Strain cocktail into chilled collins glass half-filled with ice. Add seltzer and, using bar spoon, gently lift tequila mixture from bottom of glass to top to combine. Top with additional ice. Garnish with lime slice and serve.

Why This Recipe Works

For a cocktail made with our Mixed Berry Shrub Syrup, we decided to pair tequila with the floral berry flavors, the shrub syrup bringing sufficient sweetness to enable us to forgo any additional sweetener. Tasters did like just a little lime juice for its fresh zing. Topped with fizzy seltzer, in the style of collins drinks, our bright pink cocktail was as beautiful to look at as it was easy to imbibe, confirming the staying power of shrubs.
