Double Chocolate Dessert Waffles with Ice Cream

Ingredients

2½ ounces (71 grams) semisweet chocolate, chopped1¼ cups (6¼ ounces/177 grams) all-purpose flour ½ cup (3½ ounces/99 grams) sugar, plus extra for cooking waffles¼ cup (¾ ounces/21 grams) unsweetened cocoa powder 2 teaspoons baking powder ½ teaspoon table salt 1 cup milk 3 large eggs 4 tablespoons unsalted butter, melted and cooled1 teaspoon vanilla extract 4 cups ice cream

Before You Begin

If not serving the waffles straight from the waffle iron as they finish cooking, place them on a wire rack, cover with a clean kitchen towel, and keep warm in a 200-degree oven; remove the towel and let the waffles recrisp in the oven for several minutes before serving. The sugar sprinkled onto the waffle iron hardens as it cools, so you'll want to clean the waffle iron while it's still hot. We like to serve the waffles with Classic Hot Fudge Sauce.

Instructions

  1.  Microwave chocolate in bowl at 50 percent power, stirring occasionally, until melted, 30 to 60 seconds. Whisk flour, sugar, cocoa, baking powder, and salt together in bowl. Process melted chocolate, milk, eggs, butter, and vanilla in food processor until smooth, about 5 seconds. Add flour mixture and pulse to combine, about 10 pulses; transfer to bowl.
  2.  Meanwhile, heat waffle iron according to manufacturer's instructions. Spray hot waffle iron with vegetable oil spray and sprinkle with ½ teaspoon sugar. (If your waffle iron makes 2 waffles at a time, sprinkle ½ teaspoon over each side.) Spread appropriate amount of batter onto hot waffle iron and cook until toasted and crisp, about 3 minutes; transfer to plate. Repeat with remaining batter. Serve waffles hot with ice cream.

Why This Recipe Works

Since this was dessert, we wanted our waffles to be chocolate, and a combination of cocoa powder and semisweet chocolate hit all the right notes. Sprinkling the waffle iron with a bit of sugar before pouring on the batter imparted a sweetly crisped crust that perfectly complemented the creamy ice cream. The recipe may yield a different number of waffles if you have a smaller or larger waffle maker; the recipe makes about 3 cups of waffle batter.
