Toaster-Oven Baked Turkey-Chutney Sandwiches

Ingredients

3 ounces sharp cheddar cheese, shredded (¾ cup)1 ounce Monterey Jack cheese, shredded (¼ cup)4 slices hearty white sandwich bread 2 tablespoons unsalted butter, melted2 tablespoons mango chutney, plus extra for serving1½ small shallot, sliced thin4 ounces thinly sliced deli smoked turkey

Before You Begin

If mango chutney is not available, you can substitute fig jam or apricot jam.

Instructions

  1.  Adjust toaster oven rack to middle position and heat oven to 450 degrees. 
  2.  Combine cheddar and Monterey Jack in bowl. Brush one side of each bread slice with melted butter. Flip bread and spread 1½ teaspoons chutney over second side of each slice. Layer 2 bread slices evenly in the following order: half of cheese mixture, shallot, turkey, and remaining cheese mixture. Top with remaining 2 bread slices, buttered side up, and compress sandwiches. 
  3.  Place sandwiches on small rimmed baking sheet and bake until bread is golden brown on bottom side, 3 to 5 minutes. Flip sandwiches and continue to bake until cheese is melted and bread is golden brown on bottom side, 3 to 5 minutes. Serve with extra chutney.

Why This Recipe Works

These quick and sophisticated turkey sandwiches are just the thing to jazz up lunch: warm toasted bread, creamy melted cheese, and flavorful chutney. When it came to the cheese, we found that sharp cheddar was full of flavor, but didn’t melt easily. Shredding the cheddar and combining it with shredded Monterey Jack helped it melt more smoothly without compromising the taste. We opted to use sliced, smoked deli turkey for convenience, while a little chutney spread on the bread elevated the entire sandwich. Thinly sliced shallot added textual contrast as well as a fresh bite. Lastly, buttering both sides of the sandwich and flipping it halfway through ensured that both sides turned golden brown.
