Toaster-Oven Bacon and Onion Sliders

Toaster-Oven Bacon and Onion Sliders

Ingredients

Sauce

4 teaspoons mayonnaise 1½ teaspoons ketchup 1 teaspoon sweet pickle relish ⅛ teaspoon pepper

Sliders

8½ ounces 85 percent lean ground beef ½ cup finely chopped onion 2 slices bacon, chopped fine1½ teaspoons vegetable oil, divided¼ teaspoon table salt, divided⅛ teaspoon pepper, divided4 (2½-inch) slider buns or soft dinner rolls 2 slices deli American cheese (2 ounces)

Instructions

    for the sauce

  1.  Whisk all ingredients together in bowl; refrigerate until ready to use. 
  2. for the sliders

  3.  Cut sides of 1-quart zipper-lock bag, leaving bottom seam intact. Divide beef into four 2-ounce portions, then roll into balls. Enclose 1 ball in split bag. Using clear pie plate, press ball into even 4-inch-diameter patty. Remove patty from bag and place on large plate. Repeat with remaining beef balls. Cover plate with plastic wrap and refrigerate patties until ready to cook. (Patties can be shaped up to 24 hours in advance.) 
  4.  Adjust toaster oven rack to lowest position and heat oven to 450 degrees. Combine onion, bacon, ½ teaspoon oil, ⅛ teaspoon salt, and pinch pepper on small rimmed baking sheet, then spread into even layer. Cook until onions are softened, bacon fat is rendered, and bacon is beginning to crisp, 8 to 10 minutes, stirring halfway through cooking. Transfer onion mixture to bowl. 
  5.  Divide sauce evenly among bun bottoms and arrange on serving platter. Stack cheese slices and cut into quarters (you will have 8 pieces). Coat now-empty sheet with remaining 1 teaspoon oil. Sprinkle patties with remaining ⅛ teaspoon salt and remaining pinch pepper. Arrange patties on sheet and cook until edges are set and tops are still slightly pink, 2 to 4 minutes. 
  6.  Remove sheet from oven. Flip patties and top each with 2 pieces of cheese and one-quarter of onion mixture. Place bun tops on patties and cook until toppings and buns are heated through, about 1 minute. Transfer burgers with bun tops to prepared bun bottoms and serve.

Why This Recipe Works

These sliders satisfy a lot of cravings: tender beef patty, soft roll, gooey cheese, and sweet onions. We set out to create an effortless recipe for juicy sliders, a great topping, and soft buns using a single small rimmed baking sheet and our toaster oven. Eliminating the need for the stovetop meant we could avoid the spitting oil of pan-searing. To shape each slider-sized patty, we pressed 2 ounces of ground beef between the layers of a split plastic bag using a clear pie plate, which made it easy to see when the patty measured 4 inches across. To build up the umami and toasty flavors, we put together a flavor-packed topping of crispy bacon bits and softened onions, which we cooked on a small baking sheet in our toaster oven. Once the topping was ready, we cleared the sheet and arranged our patties in a single layer to cook. To prevent overcooking we flipped them when nearly done before layering on cheese and adding the savory onion-bacon mixture and our bun tops. We put these nearly assembled sliders back in the toaster oven to melt the cheese, warm the buns, and meld the flavors. A simple burger sauce on the bun bottoms sealed the deal.
