Toaster-Oven Roasted Green Beans with Goat Cheese and Hazelnuts

Ingredients

12 ounces green beans, trimmed3 tablespoons extra-virgin olive oil, divided¼ teaspoon sugar ¼ teaspoon plus ⅛ teaspoon table salt, divided¼ teaspoon plus ⅛ teaspoon pepper, divided1 garlic clove, minced½ teaspoon grated orange zest plus 1 teaspoon juice1 teaspoon lemon juice ½ teaspoon Dijon mustard 1 tablespoon minced fresh chives 1 ounce goat cheese, crumbled (¼ cup)2 tablespoons chopped toasted hazelnuts

Instructions

  1.  Adjust toaster oven rack to lowest position and heat oven to 450 degrees. Toss green beans, 1 tablespoon oil, sugar, ¼ teaspoon salt, and ¼ teaspoon pepper together in bowl, then spread into even layer on small rimmed baking sheet. 
  2.  Cover sheet tightly with aluminum foil and roast for 12 minutes. Remove foil and continue to roast until green beans are spotty brown, 10 to 15 minutes. 
  3.  Meanwhile, combine garlic, orange zest, and remaining 2 tablespoons oil in large bowl and microwave until fragrant, 30 to 60 seconds; let steep for 1 minute. Whisk in orange juice, lemon juice, mustard, remaining ⅛ teaspoon salt, and remaining ⅛ teaspoon pepper. Add green beans and chives and toss to combine. Transfer to serving platter and sprinkle with goat cheese and hazelnuts. Serve.

Why This Recipe Works

To ensure plenty of flavor-boosting color, we tossed the beans with a touch of sugar along with olive oil, salt, and pepper. We knew the quick-cooking beans could only handle a short stay in the toaster oven before they overcooked, so we spread them on a small rimmed baking sheet and sealed them under aluminum foil so they could steam gently in the toaster. Uncovering the beans for the final 10 minutes let the sugar caramelize, turning the beans an appealing blistered, speckled brown. To lift the flavorful beans to another level entirely, we then tossed them with a warm orange vinaigrette and fresh chives and topped them with goat cheese and hazelnuts for a nutritious, well-rounded, and deeply flavored side.
