Before You Begin
You will need an 8-inch square broiler-safe baking dish or pan for this recipe. This recipe can be easily doubled using a 13 by 9-inch broiler-safe baking pan.
Instructions
- Adjust toaster oven rack to middle position and heat oven to 400 degrees. Mix 4 teaspoons sugar and ¼ teaspoon orange zest in small bowl until thoroughly combined; set aside.
- Toss sweet potatoes and remaining 2 teaspoons sugar together in bowl, then spread into even layer on aluminum foil–lined small rimmed baking sheet. Cover sheet tightly with foil and roast until sweet potatoes are tender, 45 to 60 minutes, rotating sheet halfway through roasting. Remove sheet from oven, select broiler function, and heat broiler.
- Transfer potatoes and any accumulated liquid to food processor. Add butter, cream, salt, cinnamon, pepper, cayenne, remaining ¼ teaspoon orange zest, and orange juice and process until completely smooth, 30 to 60 seconds, scraping down sides of bowl as needed.
- Transfer potato puree to 8-inch square broiler-safe baking dish or pan and sprinkle evenly with reserved sugar-zest mixture. Broil sweet potatoes until topping is melted and beginning to caramelize, 10 to 12 minutes. Transfer dish to wire rack and let cool for 10 minutes. Serve.

Why This Recipe Works
We steamed cubed sweet potatoes seasoned with brown sugar under an aluminum foil seal and cooked them until soft. The food processor ensured a perfectly smooth puree, butter and cream added richness, while cinnamon, orange zest, and a pinch of cayenne rounded out the flavors. Finally, a simple topping of more sugar and zest sprinkled over the casserole and a quick trip under the toaster oven’s broiler created a crisp, caramelized crust.
