Air-Fryer Roasted Fruit and Almond Butter Toast

Ingredients

2 ounces (57 grams) ripe banana, seedless grapes, blueberries, raspberries, and/or hulled strawberries2 tablespoons natural, unsweetened almond or peanut butter 1 (1⁄2-inch-thick) slice rustic whole-grain bread ½ teaspoon honey or maple syrup

Before You Begin

Depending on the size of your air fryer, you may need to trim the bread slice to lay flat in the basket. Let your creativity run wild with the fruit you use; use a single variety or a combination. Customize your toast with additional toppings such as toasted nuts, seeds, or shredded coconut.

Instructions

  1. Slice banana ¼ inch thick, halve grapes, and/or quarter strawberries. Spread almond butter onto bread and top evenly with fruit. Place bread into air-fryer basket. Place basket into air fryer and set temperature to 400 degrees. Cook until fruit begins to caramelize and toast is golden brown around edges, 6 to 10 minutes. Transfer bread to plate and drizzle with honey. Serve.

Why This Recipe Works

While developing this recipe, we weren't sure if we would have to pretoast the bread, take it out, top it with fruit, and put it back in the air fryer. But we found that the air fryer's rapidly circulating heat perfectly toasted the bread and caramelized the fruit all at once in less than 10 minutes. To save even more time, rather than tossing the uncooked fruit in sugar before laying it on the bread, we sweetened it afterward, drizzling the toast with a little honey or maple syrup. We preferred bananas, grapes, and berries here; citrus tends to dry up and turn bitter in the air fryer.
