Air-Fryer California Turkey Burgers

Air-Fryer California Turkey Burgers

Ingredients

½ avocado 1 small shallot, minced1 teaspoon distilled white vinegar ¼ teaspoon sugar ¼ teaspoon table salt, divided3 tablespoons plain yogurt 2 tablespoons panko bread crumbs ¼ teaspoon ground black pepper 8 ounces ground turkey 2 slices Swiss, provolone, or pepper Jack cheese 2 hamburger buns, toasted if desired½ tomato, sliced thin1 ounce (½ cup) alfalfa sprouts

Before You Begin

Be sure to use ground turkey, not ground turkey breast (also labeled 99 percent fat-free), in this recipe. Ground chicken also works well here. This recipe can be easily doubled.

Instructions

  1.  Using fork, mash avocado, shallot, vinegar, sugar, and ⅛ teaspoon salt to coarse paste in bowl; set aside for serving.
  2.  Lightly spray bottom of air-fryer basket with canola oil spray. Using fork, mash yogurt, panko, pepper, and remaining ⅛ teaspoon salt to paste in medium bowl. Add turkey and lightly knead with hands until mixture forms cohesive mass. Using lightly moistened hands, divide turkey mixture into 2 lightly packed balls, then flatten each gently into ½-inch-thick patty. Press center of each patty with your fingertips to create ¼-inch-deep depression.
  3.  Arrange patties in prepared basket, spaced evenly apart. Place basket into air fryer and set temperature to 350 degrees. Cook until burgers are lightly browned and register 160 degrees, 10 to 15 minutes, flipping halfway through cooking.
  4.  Turn off air fryer. Top burgers with cheese and let sit in warm air fryer until melted, about 1 minute. If desired, arrange bun tops and bottoms cut side up in now-empty basket. Return basket to air fryer, set temperature to 400, and cook until buns are lightly toasted, 4 to 6 minutes. Serve burgers on buns, topped with avocado mixture, tomato, and alfalfa sprouts.

Why This Recipe Works

On its own, ground turkey cooks up dry and dense—the extra-lean meat can't hold on to its own moisture during cooking. But we found that mixing in yogurt and panko gave the burgers structure and kept them moist. Making a slight indentation in the raw patties prevented them from puffing up too much as they cooked. And what's a California turkey burger without avocado? We decided to give the fruit a bit of a twist by pickling it, which added vibrancy and zip to the creamy avocado.
