Air-Fryer Roasted Broccoli

Ingredients

1 tablespoon water 1 tablespoon extra-virgin olive oil, plus extra for drizzling¼ teaspoon table salt 1 pound broccoli florets, cut into 2-inch piecesLemon wedges

Before You Begin

To preserve the crispness in our variations, we sprinkled the roasted broccoli with toppings that added flavor and texture rather than a liquid finish that would make them soggy. This recipe can be easily doubled.

Instructions

  1. Whisk water, oil, and salt in large bowl until salt has dissolved. Add broccoli and toss to coat; transfer to air-fryer basket and spread into even layer. Place basket into air fryer and set temperature to 350 degrees. Cook until broccoli is well browned and tender, 8 to 12 minutes, tossing halfway through cooking. Transfer broccoli to serving platter and drizzle with extra oil. Serve with lemon wedges.

Why This Recipe Works

For a healthy side you can't stop eating, we air-fried the vegetable quickly. We cut broccoli florets into 2-inch pieces. To cook, flavor, and crisp up vegetables such as broccoli in the air fryer, we learned that tossing them with water and oil does the trick. Oil and water together might seem counterintuitive, but here's what happens: The water steams the vegetable initially to soften it, and when the water evaporates, the oil provides optimal heat transfer and browning. We drizzled the cooked broccoli with a little more oil before serving.
