- Toss squash with oil and salt in bowl; arrange in even layer in air-fryer basket. Place basket into air fryer and set temperature to 350 degrees. Cook until squash is tender and golden brown, 18 to 20 minutes, tossing halfway through cooking. Transfer squash to serving platter, sprinkle with parsley, and serve.

To have another squash side dish in your back pocket, consider delicata. The air fryer enhanced its natural sweetness and also added toastiness. The air fryer sped up the cooking process, too, and tossing the unpeeled squash with a little oil aided in browning. Two sauces—a spicy maple syrup and a goat cheese and chive sauce—bring heat or add richness to the roasted squash. Delicata have thin, edible skin that needn't be removed; simply use a vegetable peeler to pare away any tough brown blemishes.
