Acai Smoothie Bowls

Ingredients

1 (3½-ounce) pouch unsweetened frozen acai puree 1 cup (5 ounces) frozen mixed berries 1 cup (5 ounces) frozen mango chunks1 ripe banana, peeled and broken into pieces½ cup plain yogurt 1 tablespoon honey ⅛ teaspoon table salt Toppings (see “Up Your Game,” below)

Before You Begin

Do not use Greek yogurt in this recipe, as it will make the smoothie bowls too thick. If you can’t find frozen acai puree, you can increase the frozen mixed berries to 1¾ cups (8¾ ounces) and add 2 tablespoons of acai powder along with the other ingredients in step 3.

Instructions

  1. Fill medium bowl with warm water. Place frozen acai pouch in water and let thaw slightly, about 2 minutes.
  2. Open pouch and add acai puree to food processor, breaking apart any large pieces. Add berries and mango and lock lid into place. Hold down pulse button for 1 second, then release. Repeat until fruit is finely chopped, about twenty 1-second pulses.
  3. Remove lid and use rubber spatula to scrape down sides of processor bowl. Add banana, yogurt, honey, and salt. Lock lid back into place. Turn on processor and process until smooth, about 1 minute, stopping halfway through to scrape down sides of processor bowl.
  4. Remove lid and carefully remove processor blade (ask an adult for help). Divide smoothie between 2 serving bowls. Add your favorite toppings. Serve.

Why This Recipe Works

Is this breakfast or a work of art? Try both! Kids of all ages will have a blast blending up frozen fruit with yogurt and honey and topping it with fresh fruit, nuts, shredded coconut, granola . . . whatever their imagination—and your kitchen—dream up! These smoothie bowls get their red-purple color from the fruity acai puree. As kids are eating their bowls, ask them if they can name fruits (or vegetables) in every color of the rainbow. These different colors are one indicator of the different nutrients in each piece of produce.
