Strawberry Cream "Shortcake"

Ingredients

Vegetable oil spray 1½ cups (7½ ounces/213 grams) all-purpose flour 1½ teaspoons baking powder ¼ teaspoon table salt ¾ cup (5¼ ounces/149 grams) plus 1 tablespoon sugar, measured separately⅔ cup (5⅓ ounces) milk 2 large eggs 6 tablespoons unsalted butter, melted1½ teaspoons vanilla extract 2 cups (10 ounces/283 grams) strawberries, hulled and quartered2 cups whipped cream (see note, above)

Before You Begin

To make 2 cups whipped cream: In large bowl, combine 1 cup cold heavy cream, 1 tablespoon sugar, and 1 teaspoon vanilla extract. Use electric mixer on medium-low speed to whip cream for 1 minute. Increase speed to high and whip until cream is smooth and thick, about 1 minute. Stop mixer and lift beaters out of cream. If cream clings to beaters and makes soft peaks that stand up on their own, you’re done. If not, keep beating and check again in 30 seconds. Don’t overwhip cream. 

Instructions

  1. Adjust oven rack to middle position and heat oven to 350 degrees. Spray inside of 9-inch round cake pan with vegetable oil spray. Line bottom of cake pan with parchment paper.
  2. In medium bowl, whisk together flour, baking powder, salt, and ¾ cup sugar.
  3. In large bowl, whisk together milk, eggs, melted butter, and vanilla.
  4. Add flour mixture to milk mixture and use rubber spatula to stir until just combined. Scrape batter into parchment-lined cake pan and smooth top.
  5. Place cake pan in oven. Bake until toothpick inserted in center of cake comes out clean, 26 to 30 minutes. 
  6. Use oven mitts to remove cake pan from oven and place on cooling rack (ask an adult for help). Let cake cool completely in pan, about 2 hours.
  7. Meanwhile, in second medium bowl, use clean rubber spatula to combine chopped strawberries and remaining 1 tablespoon sugar. Let sit while cake cools. 
  8. Remove cake from cake pan, discard parchment, and transfer to serving platter following photos, “Step-by-Step: How to Remove Cakes from Cake Pans,” below. Spread whipped cream over top of cake. Arrange strawberries over whipped cream. Cut into wedges and serve.

Why This Recipe Works

A buttery, stir-together cake replaces the biscuits in this strawberry shortcake-inspired dessert. Topped with whipped cream and sweet, juicy strawberries, it’s a celebration-worthy cake that’s fun (and easy!) to cook together with kids. While your young chef is preparing their ingredients, teach them the easiest (and least messy!) way to melt butter—using the microwave. Start by cutting the butter into 1-tablespoon pieces and placing it in a microwave-safe bowl. Cover the bowl with a microwave-safe plate. Place the bowl in the microwave and heat at 50 percent power until the butter is melted, 30 to 60 seconds (longer if you're melting more butter). The plate on top prevents messy splatters.
