Why This Recipe Works
The pairing of sweet bananas and salty, creamy peanut butter is an old standby because the flavors contrast so perfectly that they meld into a completely new one, not quite savory and not quite sweet. But because that strong flavor can be easy to overdo, we mellowed the intensity with neutral, creamy yogurt. Bananas, peanut butter, and yogurt all have thick consistencies, so adding a small amount of water was necessary to help the blender blade catch, turn, and process the ingredients properly. We also tested with powdered peanut butter and water and found that it was a perfect swap because the powder had concentrated flavor and the water served as a liquefier. A cooling cup of ice thrown into the blender worked to add aeration and break up the creamy, dense texture. This combination is so good that you could call it the King of Smoothies.
