Daily Greens Juice

Ingredients

1 (¼-inch-thick) slice lemon 1 (½-inch) piece fresh ginger ½ cup fresh parsley and tender stems4 ounces lacinato kale ½ green apple, cored2 celery ribs

Before You Begin

To process leafy greens, pack them into a tight bundle and fill the feed tube before juicing. You can roll leaves up like a cigar, layering small leaves inside bigger ones. This is especially important for centrifugal juicers.

Instructions

  1. On low speed, process lemon through juicer into storage container or serving glass. Increase speed to high. In order listed, process remaining ingredients. Stir to combine before serving.

Why This Recipe Works

This introductory green juice doesn't skimp on vegetal content but has a well-balanced, drinkable flavor that you'll want to reach for. Parsley and lacinato kale, also known as Tuscan kale, served as the base for our juice, with parsley bringing a grassy brightness to balance the more bitter kale. Celery added savory volume to the drink thanks to its high water content and also helped subdue the intense kale flavor. Our fourth green ingredient came in the form of a green apple, which contributed a sweet-tart tang to mellow the greens. Lemon and ginger, a common pairing in juices, worked to enhance the greens by adding some acidity and lively spicy notes.
