Why This Recipe Works
During our smoothie endeavors, we discovered our love for pineapple in drinks because of its immediately recognizable tropical, acidic flavor, so we created a juice that utilizes it as a complementary ingredient alongside a hearty green. While kale can be accused of tasting aggressively healthy, it needs only a few other ingredients to work as a great green backdrop to bolder flavors. Pineapple is a naturally juicy fruit, so when put through a juicer, much of its body made its way through the machine to become a thickened juice that held on to the kale flavor while subduing its intensity. The addition of a yellow bell pepper and cilantro gave the pineapple and kale another kick of sweetness as well as an herbal component that complemented the fruit, as it would in a mixed drink, without being overly cilantro-esque (even for cilantro haters).
