Before You Begin
We prefer to use seedless watermelon. Cut your watermelon into the biggest pieces possible that will still fit through the juicing tube in order to yield the most juice. Use whole romaine leaves, leaf side down.
Instructions
- On low speed, process watermelon through juicer into storage container or serving glass. Increase speed to high. In order listed, process remaining ingredients. Stir to combine before serving.

Why This Recipe Works
Watermelon is such a sweet and juicy fruit that it can be hard to find suitable pairings. For inspiration we looked to watermelon salads, where savory ingredients like feta cheese and herbs work well with the fruit's sweetness. We knew that red bell pepper made a delicious sweet counter part in our Watermelon Gazpacho Smoothie, but here we aimed for a greener and more vegetal taste. Half a green bell pepper brought what we needed; it is less mature than yellow, orange, and red peppers, so it tastes more crisp and verdant. To further our flavor mission, we juiced some romaine lettuce to act as our “salad” base, adding volume and clean flavor.
