Why This Recipe Works
We started on this juice journey wanting to include the vaguely floral quality of fennel for its distinctive anise-like flavor. This fresh licorice hint reminded us of a complex mixed drink, so sweet fruit seemed like a logical addition to round out the juice's profile. Juiced green grapes produced a deliciously sweet nectar with a freshness not found in its syrupy bottled equivalents. Bottled grape juice often contains apple juice, so we took that idea and ran with it: Sticking with our green theme, we added green apple for body and acidic sweetness. We wanted to create a woodsy, herbal taste that paired with the fennel and counteracted the sweetness of our bright fruits, and aromatic sage hit the nail on the head for a juice that has the complexity of a botanical mixed drink.
