Sweet Potato–Cranberry Juice

Ingredients

1 (¼-inch-thick) slice orange ⅓ cup cranberries 1 medium sweet potato (12 ounces), unpeeled and halved lengthwisePinch ground cinnamon (optional)

Instructions

  1. On low speed, process orange through juicer into storage container or serving glass. Increase speed to high and process cranberries and potato (in that order). Stir in cinnamon, if using. Stir to combine before serving.

Why This Recipe Works

Sweet potato served as the backdrop for this exciting drink because it created a mildly sweet canvas to build upon, and the starch from the potato added body and slight texture to the juice. Cranberries, while not typically consumed raw because they are so tart, were mellowed in the creamy sweet potato juice and added a bright pop of acidity. Just one slice of orange bridged the tang of the cranberries and the sweetness of the sweet potato with a hint of acidic citrus that still allowed the dominant flavors to come through. A final pinch of warm cinnamon was a divisive choice among tasters, with half loving it and half choosing to pass, but it can be added to make this juice distinctly autumnal.
