Mango Lassi

Mango Lassi

Ingredients

4 cups frozen mango chunks2½ cups plain dairy or plant-based yogurt 1 cup water, plus extra as needed2 tablespoons honey 2 teaspoons lime juice ⅛ teaspoon table salt

Before You Begin

We prefer this drink strained for a supersmooth finish, but this step is optional.

Instructions

  1. In order listed, add all ingredients to blender and process on low speed until mixture is combined but still coarse in texture, about 10 seconds, scraping down sides of blender jar as needed. Gradually increase speed to high and process until completely smooth, about 1 minute. Adjust consistency with extra water as needed. Strain mixture through fine-mesh strainer into pitcher, pressing on solids to extract as much liquid as possible; discard solids. Serve over ice. (Mango lassi can be refrigerated for up to 1 day; stir to recombine before serving.)

Why This Recipe Works

Lassi is a refreshing, creamy, yogurt-forward drink with origins in North Indian cuisine. It is enjoyed for its delicious flavor and also as a support for digestive health due to its yogurt base. To make it, yogurt is blended with water, spices, and other ingredients. Lassis come in many varieties, with mango- flavored one of the most popular around the world. We found that the best mango lassi recipe required a generous amount of fruit; fortunately, frozen mango is convenient, fresh-tasting, and widely available. In addition to the fruit, we liked the full flavor of whole-milk yogurt (though low-fat and nonfat yogurt made reasonably good lassis as well). To keep the drink from becoming unpleasantly thick, we added water to the blender to thin it. For sweetness, we liked the floral notes of honey and found that a pinch of salt and a squeeze of lime juice perked up the tropical mango flavor.
