- Adjust oven rack to middle position and heat oven to 350 degrees. Line 12-cup muffin tin with 12 paper liners.
- In medium bowl, whisk together flour, baking powder, and salt.
- In large bowl, whisk brown sugar and melted butter until smooth. Add eggs and vanilla and whisk until smooth.
- Add flour mixture and use rubber spatula to gently stir until just combined. Stir in white chocolate chips.
- Use 2 spoons to divide batter evenly among muffin cups, filling each cup about halfway.
- Place muffin tin in oven. Bake blondies until golden brown, 14 to 16 minutes.
- Use oven mitts to remove muffin tin from oven and place on cooling rack (ask an adult for help). Let blondies cool in muffin tin for 15 minutes.
- Remove blondies from muffin tin and transfer to cooling rack. Let blondies cool for at least 10 minutes before serving.

Why This Recipe Works
What are sweet, vanilla-y, and studded with creamy white chocolate chips? These blondies! Rather than bake them in a pan and cut them into individual squares, we make ours in a muffin tin—so easy. That means less baking time, they’re easy to eat on the go, and perfect for bake sales and parties. While brownies are deeply chocolaty, blondies are often made with white chocolate. But why doesn’t white chocolate taste, well, chocolaty? When chocolate is processed, it’s split into two parts: cocoa butter and cocoa solids. Cocoa butter is responsible for chocolate’s richness, while cocoa solids contain most of chocolate’s flavor, color, and aroma. White chocolate, unlike other types of chocolate, contains only cocoa butter. That’s why it’s so light in color and doesn’t taste chocolaty. While the blondies bake, kids can taste a white chocolate chip and describe its flavor. If you have any other types of chocolate on hand, kids can have a bite and compare the two.
