Ancho-Pineapple Mezcal Margarita with Tajín

Ingredients

1 tablespoon Tajín Clásico SeasoningLime wedge 2 ounces Ancho Mezcal Liqueur 1½ ounces pineapple juice ¾ ounce lime juice ½ ounce Cointreau

Before You Begin

We prefer to use our homemade Ancho Mezcal Liqueur here, but you can substitute a store-bought dark chile liqueur, such as Ancho Reyes, though the base spirit in other liqueurs may vary.

Instructions

  1. Spread seasoning mix into even layer on small saucer. Cut ¼-inch-deep notch crosswise in lime wedge. Place notch of lime wedge on rim of chilled old-fashioned glass. Slide lime wedge around outer edge of rim; discard lime wedge or reserve for another use. Roll moistened rim in seasoning mix to coat; set aside.
  2. Combine liqueur, pineapple juice, lime juice, and Cointreau in cocktail shaker, then fill with ice. Shake mixture until fully combined and well chilled, about 15 seconds. Strain cocktail into prepared glass half-filled with ice or with 1 large ice cube. Serve.

Why This Recipe Works

This recipe was inspired by the versatility of the flavors of the classic margarita. We subbed in our homemade Ancho Mezcal Liqueur for the tequila. Our liqueur has a mezcal base, so it's similar to the traditional tequila but has some smoky notes as well. We loved the tropical addition of pineapple juice because it paired perfectly with the deep chile flavor of the liqueur. To spice things up further, we used Tajín Clásico Seasoning, a proprietary chile-lime seasoning blend, in place of the traditional salt rim.
