Microwave Crispy Garlic Chips

Ingredients

½ cup thinly sliced garlic ½ cup vegetable oil

Instructions

  1. Stir garlic into vegetable oil in a medium microwavable bowl.
  2. Microwave for 3 minutes. If the garlic hasn't begun to brown, stir and microwave 90 seconds longer.
  3. Repeat stirring and microwaving in 30-second increments until slices are golden brown, keeping in mind that garlic will continue to darken and crisp as it cools.
  4. Using a slotted spoon, transfer the garlic to a paper towel–lined plate. Dust the garlic with 1 teaspoon of confectioners' sugar (to offset any bitterness) and season it with salt to taste. (Fried garlic can be stored in an airtight container at room temperature for up to 2 days.)

Why This Recipe Works

Fried garlic delivers bursts of crunch and savory flavor, but it's easy to overcook, and it requires constant stirring. To make the method failproof and more hands-off, we fried ½ cup of thinly sliced garlic in ½ cup of vegetable oil in a bowl in the microwave in decreasing increments of time (first 3 minutes and then 90 seconds and then 30 seconds), stirring the mixture between increments. A sprinkling of powdered sugar offsets any bitterness, and salt enhances the garlic's savory flavor.
