Ham Rolls

Before You Begin
Cornichons are also known as gherkins; you can use sweet, savory, or spicy. If you can't find rectangular ham slices, you can use round or oval instead.
Instructions
- Using fork, mash cream cheese with curry powder until fully combined. Working with 1 ham slice at a time, place ham on clean counter. Using offset spatula, spread about 1½ tablespoons cream-cheese mixture evenly over ham slice, covering slice completely. Place 2 cornichons on top of cream cheese mixture, lengthwise along 1 short side of ham slice (cornichons should cover or nearly cover short side of slice). Starting at short side, roll ham around cornichons to form rough log shape. (Rolls can be assembled and refrigerated for up to 24 hours.)
- Using serrated knife, slice each ham roll in half crosswise, then halve again to form 4 individual rolls. Arrange individual rolls spiral side up on serving platter. Serve.

Why This Recipe Works
These ham rolls are inspired by a family recipe; they are quick to put together and pack more flavor than the sum of their parts. To make them, we started by flavoring cream cheese with curry powder (it's important to use softened cream cheese for spreadability). Then we smeared the flavored cream cheese over sliced ham and wrapped the ham around cornichons. Slicing the rolls into 1-inch pieces made them bite-size for serving at a party.
