Pomegranate Spritzer

Ingredients

4 ounces unsweetened 100 percent pomegranate juice ½ ounce Simple Syrup ¼ teaspoon nonalcoholic old-fashioned bitters 4 ounces seltzer, chilledPomegranate seeds for garnishing

Before You Begin

You can also use traditional old-fashioned bitters in this recipe.

Instructions

  1. Fill chilled highball glass halfway with ice. Add 4 ounces unsweetened 100 percent pomegranate juice, ½ ounce simple syrup, and ¼ teaspoon nonalcoholic old-fashioned bitters, and stir to combine using bar spoon. Add 4 ounces chilled seltzer and, using spoon, gently lift pomegranate mixture from bottom of glass to top to combine. Top with additional ice. Garnish with pomegranate seeds and serve.

Why This Recipe Works

There are some juices that plead to be mixed with other ingredients to bring out their best. Pure pomegranate juice isn’t one of them—its full-bodied flavor and perfect balance of sweet and tart is brilliant alone. Here we simply add old-fashioned bitters, along with just enough syrup and seltzer, to turn the juice into an elegant zero-proof cocktail. The initial sip delivers a vibrant sweetness, similar to ripe berries, balanced by a tangy, slightly astringent edge reminiscent of cranberries or red wine.
