Indoor Grilled Garlic Flatbread

Indoor Grilled Garlic Flatbread

Ingredients

1 pound pizza dough 2 tablespoons unsalted butter 2 garlic cloves, minced¼ teaspoon table salt Vegetable oil for seasoning grill pan

Before You Begin

Either store-bought or homemade pizza dough will work well here.

Instructions

  1. Divide 1 pound pizza dough into 4 equal-size pieces. With your cupped palm, form each piece into smooth, tight ball. Set dough balls on well-floured counter. Press dough balls with your hand to flatten; cover loosely with plastic wrap and let rest, at least 15 minutes.
  2. Meanwhile, combine 2 tablespoons unsalted butter, 2 minced garlic cloves, and ¼ teaspoon salt in small bowl and microwave until hot and fragrant, about 1 minute; set aside until needed. Heat cast-iron grill pan over high heat for 7 to 10 minutes.
  3. Working with 1 piece of dough at a time, stretch and roll into 9-inch round. Lightly brush hot grill pan with vegetable oil, then transfer dough round to pan and cook until puffed with light grill marks, 1½ minutes. Using tongs, flip dough over and cook on second side until cooked through with light grill marks, 1½ minutes longer.
  4. Transfer bread to platter and brush top with garlic butter. Repeat with remaining dough balls and garlic butter, brushing grill pan with additional oil as needed to prevent dough from sticking. Serve warm.

Why This Recipe Works

This quick grilled flatbread is an easy way to gussy up any meal. Pizza dough works well here for its ability to be rolled out thin while retaining a nice toothsome chew. We found that 4 ounces of dough made a perfect single serving of flatbread that fit easily on the grill pan. Heating the grill pan up before cooking the bread is crucial for nice grill marks, and it’s important to keep the pan well greased or else the dough will stick. After cooking, we finish the flatbread with a little seasoned garlic butter for a final hit of flavor.
