Ingredients
2 ounces blanco or reposado tequila 1½ ounces grapefruit juice, plus grapefruit twist for garnishing¾ ounce simple syrup ½ ounce lime juice ⅛ teaspoon grapefruit or lemon bitters 2 ounces seltzer, chilled
Before You Begin
If you need a simple syrup recipe, use ours. Make a Smoky Paloma with a split base of 1½ ounces of tequila and ½ ounce of mezcal.
Instructions
- Add tequila, grapefruit juice, simple syrup, lime juice, and bitters to cocktail shaker, then fill with ice. Shake mix- ture until just combined and chilled, about 5 seconds. Double-strain tequila mixture into chilled highball glass half-filled with ice. Add seltzer and, using bar spoon, gently lift tequila mixture from bottom of glass to top to combine. Top with additional ice. Garnish with grapefruit twist and serve.

Why This Recipe Works
“Paloma” means “dove” in Spanish, and it’s hard not to feel at peace when this refreshing Mexican cocktail is in hand. Citrus and tequila’s agave notes dovetail in this fizzy lengthened drink. In Mexico, the paloma is frequently made with grapefruit Jarritos or Squirt soda. For a consistent drink with unmistakable grapefruit flavor, we like to use fresh juice.
