Be sure to use ground turkey, not ground turkey breast (also labeled 99 percent fat-free). Feel free to swap in other styles of cooked eggs here. This recipe can be easily doubled.
Instructions
- Adjust oven rack to middle position and heat oven to 400 degrees. Toss 1¼ pounds sweet potatoes, cut into ¾-inch pieces, with 1 tablespoon oil, 1 teaspoon coriander, and ⅛ teaspoon salt on rimmed baking sheet. Spread potatoes into even layer and roast until tender and lightly browned, 25 to 30 minutes, tossing potatoes halfway through roasting.
- Meanwhile, using your hands, gently mix 8 ounces ground turkey, minced whites of 2 scallions, 1½ teaspoons maple syrup, ¼ teaspoon ground sage, and remaining ⅛ teaspoon salt in bowl until well combined. Divide turkey mixture into 4 portions (about 2¼ ounces each) and shape into 2½-inch-wide patties.
- Heat remaining 1½ teaspoons oil in 12-inch nonstick skillet over medium-high heat until shimmering. Cook patties until well browned on both sides and meat registers 160 degrees, about 3 minutes per side; transfer to plate. Add 5 cups baby spinach to now-empty skillet and cook until just wilted, about 2 minutes. Season with salt and pepper to taste.
- Bring 1 quart water to boil in medium saucepan. Gently lower 2 eggs into water and cook for 7 to 8 minutes for jammy centers. Transfer to ice bath, cool slightly, then peel and halve.
- Divide potatoes between serving bowls and top with sausage, spinach, and eggs. Sprinkle with minced greens of 2 scallions, drizzle with extra maple syrup, and serve with hot sauce.
