Don't waste hours marinating flank steak before cooking it. Coating the grilled steak with a potent sauce adds just as much flavor--and takes just 5 minutes.
Instructions
- Combine parsley, onion, garlic, vinegar, oil, pepper flakes, and salt and pepper to taste in small bowl. Season steak with salt and pepper to taste.
- Grill steak over very hot fire until browned on both sides and slightly less done than you want, about 10 minutes.
- Place steak in baking dish and coat with parsley sauce. Cover dish with foil and let rest for 5 minutes. Slice steak thinly against grain and serve with sauce remaining in baking dish.

Why This Recipe Works
In our Grilled Flank Steak with Garlic-Parsley Sauce recipe, we skipped the marinade. A sauce applied to the steak after grilling lent more flavor than any marinade we tried. We grilled the steak quickly over a very hot fire to keep the meat moist and tender. It was best to keep it rare to medium rare; otherwise it could toughen. A bold-flavored, spicy parsley and garlic sauce—based on the Argentine staple, chimichurri—was a natural match for our grilled flank steak recipe. Our ultimate Grilled Flank Steak with Garlic-Parsley Sauce recipe made for a full-flavored, tender, juicy flank steak with a delicious kick of vivid sauce.
