Juicy Gelatin Cubes

Ingredients

4 ½ cups pink lemonade or cranberry juice cocktail 3 envelopes unflavored gelatin ¼ cup (1¾ ounces/50 grams) sugar

Before You Begin

Make either the pink lemonade or cranberry juice squares and serve separately, or make both (yielding 8 servings) and stack together for a pretty presentation. Garnish each serving with a sprig of fresh mint if desired.

Instructions

  1. Soften gelatin: Place 1 cup lemonade or cranberry juice cocktail in small bowl and sprinkle gelatin over liquid. Let stand 5 minutes to soften gelatin.
  2. Heat liquid: Bring 2 1/2 cups lemonade or cranberry juice cocktail and sugar to boil in medium saucepan. Remove from heat and whisk in gelatin mixture until all lumps dissolve. Stir in remaining 1 cup lemonade or cranberry juice cocktail. Pour into 8-inch-square baking dish. Refrigerate until firm, at least 3 hours or up to 1 day.
  3. Cut and layer cubes: Cut gelatin into 1-inch squares. Divide squares among 4 dessert goblets or sundae dishes. Serve.

Why This Recipe Works

Our Juicy Gelatin Cubes recipe is reminiscent of the classic Jell-O gelatin, but a little less sweet. We used pink lemonade and cranberry juice, but any fruit juice could be substituted. We found that overcooked gelatin resulted in tough cubes, so we made sure to bring the liquid just to a boil. The gelatin cubes must be chilled for at least three hours to firm and set completely. The two flavors suggested in this recipe for Juicy Gelatin Cubes can be served separately or together.
