Waldorf Chicken Salad with Orange

Ingredients
½ cup raisins ¼ cup orange juice from 1 large orange1 tablespoon finely grated orange zest ⅔ cup mayonnaise 3 cups shredded cooked chicken 1 large sweet apple, cored and chopped1 large rib celery, chopped¾ cup walnuts, toasted and chopped
Instructions
- Stir raisins and orange juice together in bowl and plump for 10 minutes. Mix orange zest and mayonnaise together in separate bowl until combined. Toss chicken, apple, celery, and walnuts in large bowl. Add raisin and mayonnaise mixtures and toss until coated. Season with salt and pepper to taste. Serve or cover and refrigerate for up to 2 days.

Why This Recipe Works
